Blueberry Baked Oatmeal and What's Been Going on Lately


This morning, I decided to bake my oatmeal. :) I looked up a recipe on my All Recipes app. I adapted it a bit and here it is...

~ 3 cups rolled oats
~ frozen blueberries (i just dumped what was left in a bag, but was about half a bag)
~ 2 scoops of raw vanilla protein powder (Garden of Life)
~ 1/2 cup butter
~ 1 cup brown sugar
~ 2 tsp ground cinnamon
~ 1 tsp salt
~ 2 tsp baking powder
~ 1 cup milk
~ 2 eggs
~ 2 tsp vanilla extract

Preheat oven to 350.

In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, protein powder and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in blueberries. Spread into a 9X13 inch baking dish.

Bake in preheated oven for 40 minutes.

It doesn't look too appetizing because the protein powder is green. BUT, it tastes great! Here is a pic...




I have continued on my homemade cooking craze. Sunday night I made a creamy tomato soup. It was really good! At the last minute, I decided to try and make croutons. It was really easy! Those may be given as gifts in the future. :)

We have been busy around here. We are working working working! :) I am babysitting full time and LOVE it! I can honestly say that this is my favorite job EVER! So many people say they don't know how I do it or they would never do it. It does get "hairy" at times, but I don't get overwhelmed. I know Amelia enjoys the company of others around her age. It has become a way to help and provide for our family while enjoying what I do.


I also went back to work at SkiMo's two nights a week. Come and see me! :) I work on Monday and Friday nights. I enjoy it more now because I'm only there two nights a week. :) The food is awesome. They have a brick oven and cook most things in it. They have amazing pizzas with a thin Italian crust. I enjoy working for a local family-owned business. It's small and everyone who works there is friendly. There are many regulars and it's nice to see familiar faces and get to know many who are my neighbors!


We are visiting a sweet fellowship of believers at Center Point Church. It is pretty close to our house, which helps a lot! We have several friends who attend and have always talked about how they are so blessed by it. We've attended the past two Sundays and can truly say that the Holy Spirit is welcome and meets us there in Sunday school and worship. In Sunday school, we are reading through John Piper's book, This Momentary Marriage.  It's awesome! In the service, the pastor is going through a series on Matthew. It's great and very convicting. We don't know what all the Lord will bring this year, but are excited and anticipate a good year of blessings that He has to bring.
